sandy left for work early, was gone by the time i got out of bed at 9:30am. i made another western omelette for lunch, this time not cooking the eggs too long so it still stayed fluffy. afterwards i started on my slow cooker honey-garlic chicken thighs recipe. the sauce was 1/3 cup of honey, 1/2 cup of soy sauce, 1/2 cup of ketchup, and some minced garlic. the chicken thighs weren't all able to be submerged but the heat from the slow cooker would cook them all anyway.

i rode down to market basket in the afternoon to look for some pickling spice and brisket. i found the mccormick brand is saw online for $3.99. it's more economical to get that (11 different spices) instead of assembling my own spice blend. when i bought it home and opened up the container, it smells really nice. as for the brisket, i couldn't find any. is it something you have to order from the deli counter? in fact, i don't ever remember seeing raw briskets for sale in the meat department. i'll continue searching.

30 minutes before the chicken thighs were done cooking (at 7pm), i removed the chicken using tongs from the slow cooker so i could add a corn starch slurry to thicken the sauce. the chicken were already falling off the bone. i also cooked a cup of rice in the rice cooker and steamed some frozen broccoli. as for the chicken thighs, it was cooked perfectly, but the flavor was off, couldn't really tell it was honey garlic. i might've had better luck if i just resorted to some store-bought barbecue sauce, or some store-bought teriyaki.

sandy came home by 7pm right when i'd finished cooking. i offered her some chicken thighs but she said she had some leftovers she needed to finish. she revealed last night she was busy writing a proposal to reserve telescope time at one of the hawaiian telescopes. she worked until 3am and then woke up at 8am to go to the office. the deadline was today and she managed to submit it just in time.
