after cleaning the fish tank (my last guppy died a few days ago, now all that's left is a very healthy and fat tetra and some algae-covered java ferns), i made an omelette for lunch using the following ingredients: 2 eggs, 3 strips of bacon, scallions, goat cheese. i cooked the bacon first, removing them to chop up into smaller pieces on a paper towel. i fried the egg and scallion mixture in the bacon fat, then sprinkled the bacon and some goat cheese before folding everything up. not quite sure if it was one of my healthiest meals, but bacon fat makes everything taste better.

steve finally decided that we should go with ranch roofing to replace the roof. this renovation project will cost me $4000 but it'll cost him $10000 since he also wants to replace all 8 of his skylights. i still think his leaks are primarily due to old windows and improperly sloped gutters. our roof is old but does it really need to be replaced? i suppose we'll need to repair it at some point, might as well do it now while i have some money in the bank (there goes the vacation fund!), get it over it. a large part of me still thinks steve's the one who benefits the most from this repair, and because of that he should do most of the legwork. so i wasn't surprised when he delegated the responsibility of contacting ranch roofing to me.

for dinner i made a ricotta spinach pie with the leftover ricotta drew bought for his lasagna recipe 2 weeks ago. it was the 2nd time today that i dabbled in bacon, frying the chopped up bits before using the bacon fat to cook the onions and spinach. it came out pretty well, i ate twice slices.
